Biryani is such a unique dish full of flavours who will ravish the mouth of any person tasting it..
Specially the typical Mauritan Biryani..

Normally the Mauritian Biryani is a version of the Hyderbadi Dum (Kachii) biryani..

But we Mauritians, brought our own changes to the original version of Hyderbadi Dum Biryani by replacing the kashmiri chillies with fried potatoes and to my personal opinion I really love this change! :) Because I am a real potato lover! :)

Specially in a biryani.. :)

Honestly, at the only mention of a Mauritian biryani I am already drooling of hunger! :)

Because honestly WHO doesn't love biryani??? :)

At the beginning of my blogging experience, I posted the recipe of the Mauritian Beef Biryani ( http://confessionsofafoodaholic017.blogspot.co.uk/2013/04/mauritian-beef-biryani.html ) which I must admit several people have given positive feedback to it.. :)

Following the positive response from the Mauritian Beef Biryani, I decided to post the recipe for the Mauritian Chicken Biryani for all those who does not eat beef..

Because though the steps for the Mauritian Biryani may be the same for both the chicken as well the beef, yet the base of the Mauritian Chicken Biryani as well as the cooking time differs from that of the Mauritian Beef Biryani..





Several people find making biryani time consuming..

But personally I find it really easy and quick to make, provided I follow some simple steps in a typical order to save me precious minutes from being wasted..

So here's the recipe for any biryani lovers or any Mauritians in search of a really tasty and typical Mauritian Food.. :)

Mauritian Chicken Biryani
Makes for 7 persons

Ingredients:
7 chicken thighs plus legs (thighs and legs separated)
1 cup plain yogurt
1 bunch of coriander
1 bunch of mint
3 tablespoon of biryani spice (Lazzat or Shaan type brand will work fine)
1 big tomato
2 green chilies
3 1/2 cup uncooked Basmati rice (previously soaked for 1 hr)
1 tablespoon cumin powder
1 bowl of fried onions
2 big fresh red onions
5 big potatoes cut in half which you have salted and colored with a pinch of yellow color powder
2 tablespoon of Ghee
2 tablespoon crushed garlic paste
2 tablespoon crushed ginger paste
3 tablespoon cumin seeds
2 cups of water
2 Cinnamon
5 cardamoms
4 cloves
1/3 cup hot water
1/3 teaspoon powdered yellow food coloring
1 tablespoon saffron threads
1 can of green peas drained (or 1 cup of frozen peas will work fine)
Salt to taste
Oil


Directions:

First prepare all your ingredients..

This will ease and save you time for making the biryani..

I take out all my ingredients as illustrated and this really helps me to save time when cooking my chicken biryani..








Then start by deep frying your potatoes till half-done as illustrated.



 Reserve.

Meanwhile pour around 1/3 cup of hot water into a bowl and infuse 1 tablespoon of saffron for 2 to 3 minutes.Then add in around ¼ teaspoon powdered yellow food coloring to this infusion as shown below..



In your blender, blend your crushed garlic and ginger, mint, coriander, tomato, fresh onions and chillies..



Pour the mixture into your deep pot or rice cooker..

Then add in your yogurt, 2 tablespoon cumin seeds, 1 cinnamon, half of the fried onions, 3 cardamoms, 2 cloves, your spices for biryani as well as your powdered cumin..



Mix well..

Pour your chicken thighs and legs into the mixture..



Mix well as illustrated..



Then add to your chicken, your half cooked potatoes as well as 1 tablespoon of ghee and 1 tablespoon of the colored water with the saffron threads.



 And mix well again..

Salt and pepper upon taste..

Then pour water over the mixture..

Around 1 glass of water should be enough..

Pour half of the green peas and half of the remaining fried onions over the top of the gravy..

Bear in mind not to cover the preparation completely with water or you tend to overcook your biryani..

You should be able to see the chicken and potatoes as illustrated..



Mix everything well again..

Yes I know there’s a lot of mixing! :) But this is the secret for a good Mauritian biryani!
And as we say in Mauritius the more you “beat” the gravy, the tastier it will be!

Meanwhile put around 1 litre of salted water to boil in a saucepan..

Add 1 cinnamon stick, 2 cardamoms, 2 cloves and 1 tablespoon cumin seeds to your water..

When it starts to boil put in your rice till 1/2 cooked..



Drain the rice..

Spread half of the rice over the chicken mixture and over it sprinkle half of the remaining peas as well as half of the remaining fried onions..

Sprinkle around 2 tablespoon of the coloured water onto the rice..



Finish by pouring the remaining rice..

Topped with around 3 tablespoon of the remaining coloured water as well as the remaining fried onions and the remaining peas..

Finish by putting around 2 tablespoon ghee on the top of your rice..



Cover with cling film like I did and cook for around 30 minutes COVERED or till all the water is evaporated..




1 tip I will give you to know if the water in your biryani is evaporated is to listen to the light rumbling type like of noise you hear when the water is evaporated..

At this stage,you will know it’s time to turn off your gas..

Allow to sit for “dam” for another 30 minutes before serving your biryani..

For those using a rice cooker, it is even easier! :) Cover your biryani with the lid of your rice cooker and press the cooking button on your rice and allow your rice cooker to do the rest.. :)

If you have put the right amount of water your rice cooker should remain on “cooking” mode for around 30 minutes..

When done leave the rice cooker covered on “keep warm” for another 30 minutes and allow the biryani continue cooking with the steam..




Serve piping hot with a nice tomato chutney as well as a chilli sauce without forgetting the chilled Coca - Cola / Pepsi  that any Mauritian would normally have with this delicious Mauritian Chicken Biryani! :)
